Easy peach muffins

Muffins are easy. If they are demanding that means they are cupcakes or something else, but not muffins. So I want to dedicate this recipe for all of you who are looking for simple, basic recipe for muffins. They are perfect with any kind of fruits – plums, apples, cherries, strawberries. You can add chocolate if you want.


Easy muffins

Makes 16 muffins
  • 2 cup plain flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 120 g caster sugar
  • 2 eggs, beaten
  • 1/2 cup oil (I used canola oil)
  • 300 g yoghurt or sour cream
  • fruits, I used 2 peaches, but you can add more
  • Demerara sugar for sprinkling

Preheat the oven to 190°C (170°C fan).
If you are using a silicone muffin pan, just skip this step, your muffins will nicely pop up from the pan, otherwise butter a muffin pan or line them with paper cases.
Sift the flour, baking powder and baking soda into a large bowl.
Add the sugar and stir together.
In a separate bowl put the eggs, oil, and yoghurt and mix together with a fork.
Pour the liquid ingredients into the flour mixture and stir gently to combine.
Divide the mixture equally between the muffin cases.
Dice peaches and place them on the top of each muffin and sprinkle with sugar.
Bake in the oven for 25 minutes.
Leave to cool on a wire rack.


Meanwhile in Ireland

I love summers. I love heat. So while we live in Ireland I miss it. Or to be more honest I forgot about it. This year was nicer than previous one. We had a few beautiful, warm days, but that was long time ago. Last few weeks were quite wet and gloomy.
But then the sun shines again and then Ireland is so damn beautiful!

It’s like LA (probably, I’ve never been there) and we are living by the seaside and I don’t want to ever again live far away from the water

  1. Peach muffins just scream of summer. Shame we don’t have the weather to match the muffins! Great to have a good recipe to use leftover fruit in though. These look delicious!


  2. Oh how I can relate to that sentiment of living by the water. I just wish the ocean was warmer than the 13 degrees Celsius the Pacific reaches here in the middle of summer.
