I hoped to try more cookie recipes this year, but those three will need to do.
Those poppy seed butter cookies are very old school, with just a bit of crunch of poppy seeds. Butter makes tiny layers and they just melt in your mouth. I don’t think there is more beautiful smell then one of butter. I once tried a wine that I liked a lot and then a wine guy said it had notes of butter 😀
Poppyseed butter cookies

- 300g plain flour
- 100g caster sugar
- 200g butter, cold
- 3 egg yolks
- 40g poppyseed
- pinch of salt
For glaze
- 1 egg white, beaten
Preheat the oven to 180°C/160°C fan. Line a baking sheet with parchment paper.
In a medium bowl whisk together the flour and sugar. Add the butter and egg yolks. Knead the dough quickly.
Cover the dough with cling foil and chill it in a fridge for at least 30 minutes.
On the floured surface roll the dough to 0.5-cm thickness.
Cut the cookies with a cutter or glass and place them on a baking sheet.
Using a pastry brush, brush the cookies with the egg white.
Bake for 10-15 minutes or until golden.
Transfer the cookies to a wire rack to cool.
