It’s a random rainy autumn evening. I’ve just come from work. It was a long, tiring day. I’m starving. I feel lonely, cold and I don’t want to think. So as if I was on autopilot I cook hard-boiled eggs, decorate them with a decent amount of mayo and chives. I make a nice wheat bread roll with a thick layer of butter. I finish with a little dessert – a bit of chocolate, or whatever sweets I have at home and I finally feel satisfied.
Well, almost. That is one of my comfort food, but I can feel I grown up with it. Too often I use it to make me feel better, or when I’m just too lazy to think of something else and I just need to eat something.
I would like to find new recipes that will be easy, satisfying and just good for me. I wish it was as simple as saying it. There are years of habits to break, the food that is just made of memories, that I turn to without thinking. The food that seems easiest to prepare. The food that doesn’t require thinking. The food I eat because it is there, not because I want to. Do you have some your go-to recipes to share?

I discovered the plum, chia, and almond crumble when I was looking for healthier desserts and other ways of eating fruits. It’s super simple, you need just one bowl. It’s not too sweet but good for satisfying cravings. Can be made with many different fruits, depending what you have around. It’s pretty good idea for a sweet breakfast. You can mix it with yogurt like a granola.
Plum and almond crumble
- 12 plums
- 1 1/2 Tbsp chia seeds
- 2 Tbsp maple syrup
- 1/2 cup rolled oats
- 3/4 ground almond
- 2 Tbsp maple syrup
- 2 Tbsp melted coconut oil
- pinch of salt
Place rolled oats, ground almonds, maple syrup, coconut oil and salt in a bowl. Mix it with a spoon and then press the mixture into the bottom of the bowl.
Cool in the freezer for 10 minutes while you prepare the fruits.
Grease four ramekins. Sprinkle each of them with a teaspoon of ground almonds.
Place plums in the pan.
Sprinkle them with cinnamon, cardamon and chia seeds.
Drizzle it with maple syrup.
Scatter the crumble mix on top of the fruits and bake for 30 mins until golden brown.
Remove from oven and let cool slightly before eating.
Serve with some cream or ice cream.
Preheat the oven to 180ºC/160ºC fan.
