Apple muffins

I want it to be spring. It is almost here, the days are longer and flowers on my way to work open more and more every day. There is a beautiful magnolia tree that blossoms so nicely, but I don’t know how it is possible when it’s still so cold most of the times. On Friday, I was walking home from an inspirational conference and shivering. It felt like winter rather than spring. Very next evening just to warm up our apartment I was baking these humble ladies. They are simple, they are perfect for “I don’t know how to bake” people, they are perfect for busy people, or “I have no mixer people”. You can replace apples with any other fruits, chocolate probably will do as well 😉 

Apple muffins

Ingredients

  • 350g plain flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp cardamom
  • 120g light muscovado sugar
  • 2 eggs
  • 125ml (1/2 cup) vegetable oil
  • 300g sour cream
  • 4 small apples, peeled and diced

For sprinkling

  • demerara sugar

Directions

Preheat the oven to 190°C/170°C fan.
Line a muffin tin with paper cases, unless you use a silicone pan, then you can just skip it.
Sift the flour, baking powder, baking soda, cinnamon and cardamom into a large bowl. Stir in the sugar.
In a separate bowl beat the eggs, oil, and sour cream.
Pour the liquid ingredients into the flour mixture and stir gently just until combined. Fold in the diced apples.
Divide the mixture equally between the muffin cases.
Sprinkle each muffin with demerara sugar.
Bake in the oven for approximately 25 minutes or until a skewer inserted in the middle comes out clean.
Leave to cool on a wire rack.

  1. That looks pretty good to me Magda! It’s gorgeous here today with temperatures getting close to 20 and sunny so looks like spring definitely has begun here!

    • Oh Simone, don’t make me cry, here it’s around 10 and it doesn’t plan to change anywhere soon 😦 I only know it’s spring, because a park on my way to work starts to look colourful. Enjoy the weather for me.
